recipe: healthy eating



Summer time means shorts and salads to me. Even though this is Ireland and it rains more often than days in the year I still fully believe summer should (and will) always mean shorts and salads. Whilst I can't exactly prance about in my shorts out there in the rain I can indulge in super yummy salads and share them here! Because they are just THAT good.


Super awesome roasted veggies and pasta
you will need: 
A couple of different veggies of your choice to roast (i choose asparagus, celery, butter-nut squash, tomatoes courgette and garlic) some salt and pepper, sunflower oil, balsamic vinegar and a cup of pasta shapes.


method:
Turn on your oven at 200c, chop all veggies to size and put them in a bowl. mix your dressing - 2 to 3 tablespoons of oil mixed with some pepper and salt and 2 tablespoons of balsamic vinegar. Mix and splash around your veggies making sure all is evenly covered. Place veggies on a baking tray and roast under the oven for about 20 minutes. Cook your pasta whilst veggies are roasting and mix together when veggies are ready to come out. simple and so tasty. MMM! Just writing this post out has made me want to cook it again!
